I decided to go with something different for breakfast this morning. Did 2 tablespoons of chia seeds in a cup of almond milk then stirred in a half cup of chopped fresh pineapple, a half cup of blueberries and a tablespoon of hemp seeds. It was good! A bit on the light side as I was feeling hunger pangs by 10 am but was able to hold off on lunch until 12:30 when we got home. Had some delicious gazpacho soup with some lovely homemade bread that I baked yesterday. I’m thankful for the ability and skill to make homemade bread from scratch without having to consult a recipe book or online. Just do it from memory. The ratio of about 2 cups liquid + 1/2 cup liquid plus a bit of sweetner to dissolve the yeast plus your salt, sweetner and oil to about 4 to 5 cups of flour. I add in rolled oats, wheat germ, ground flax and this time, hemp seeds for extra “ompfh” power bread LOL. Makes for a tasty bite. Had some cheddar cheese too but not too much of that since it’s very high in fat.
We just got back in time after a brief walk in the neighbourhood before a thunder and lightning storm. After we were inside it took about 5 minutes for a bright lightning bolt and direct crack of thunder overhead to shake the house. It started pouring!! Still raining now, 40 minutes later. Thankfully we didn’t lose power.
So, thankful for the lovely food I got to eat today. Thankful for the car ride we took, the walk we had, the time Tim and I got to spend together, in nature, enjoying life. Life is good 🙂
